An exciting opportunity exists for a world-class Cellar Master to join Explora Journeys to oversee the wine operation onboard.
Key Responsibilities
1. Collaborate with the Beverage Manager and Restaurant Operations Manager to supervise the overall beverage operation, focusing on wine service in dining rooms.
2. Work closely with the Sommelier and Beverage team using a hands-on leadership approach, emphasizing guest service techniques and experiences.
3. Deliver tasting events with professionalism and entertainment value, continually seeking ways to enhance the wine tasting program.
4. Maintain adherence to Public Health regulations at all times.
5. Be responsible for the upkeep and maintenance of the entire wine list, including menu suggestion wines.
6. Manage assets effectively, ensuring facilities and equipment are in good working order.
7. Participate actively in new crew training and development, focusing on overall crew retention.
8. Maintain required wine par levels in all outlets, conducting periodic spot checks to ensure accurate requisitions and transfer forms.
9. Assist the Beverage Manager in forecasting beverage consumption and placing accurate, timely orders.
10. Play a key role in loading and managing the wine store.
11. Stay informed about PPD targets and actual figures.
12. Focus on increasing wine knowledge for guests, providing upselling opportunities while maintaining costs.
Requirements
1. Minimum 4 years of wine experience.
2. Preferably a Court of Master Sommeliers Certified Sommelier or WSET Level 3-4.
3. Fluent English, with additional European languages such as Italian, French, German, Spanish, and Portuguese highly regarded.
4. Working knowledge of MS Office Suite, Micros, Fidelio/Otalio or similar systems.
5. Flexible and proactive.
6. Complete integrity.
