Food & Beverage Manager
Location: Aargau, Switzerland
Salary: 6750 CHF
Language Requirement: Fluent German Essential
An exciting opportunity for an experienced F&B Ops Manager to head a small team at a 4* hotel situated in a stunning location near Zurich in Switzerland.
Duties and Responsibilities:
1. Manage the day-to-day operations of the Food and Beverage sections in close liaison with the F&B director.
2. Control, analyse and initiate corrective measures in terms of quality, guest satisfaction, marketing, costs and hygiene.
3. Co-ordinate and supervise the preparation, presentation and service of food and beverage products to ensure the highest quality at all times.
4. Establish and maintain effective employee relations and ensure the effective orientation of new starters.
5. Assist in the hiring, appraisals, coaching, and dismissal if necessary to ensure appropriate staffing and productivity in agreement with the General Manager, Executive Chef and HR Manager.
6. Assist in developing and implementing formal training plans for the department staff. Evaluate the training needs of each section at all levels and implement development where necessary.
7. Supervise and co-ordinate pricing and preparation of menus, beverage and wine lists considering factors such as local requirements, market needs, competition, trends, recipes, cost and availability of ingredients/products.
8. Review menus and beverage lists as required quarterly, bi-annually and annually.
9. Regularly survey and compile information on competitors including any current promotions.
10. Liaise with the Purchasing Manager, Executive Chef and Cost Controller to facilitate stock control. Approve all wine purchases and other food and beverage items in accordance with quality and quantity standards set by the management.
11. Assist in conducting weekly department meetings with regards to financial results, projected business, operational results and issues, procedural changes, management policies and process improvement.
12. Maintain records for all F&B items including sales history, actual costs, potential costs, stock and production times.
13. Implement a daily, weekly and monthly checklist for all F&B outlets and monitor performance.
14. Assist in the preparation of monthly reports and prepare the annual budget of the F&B function for approval.
15. Keep abreast of development in trends, systems, practice and equipment in the service industry.
16. Liaise closely with the marketing department to initiate special promotions and food and beverage advertising schedules.
Required Skills/Experience:
1. Proven management abilities and knowledge in food and beverage business and operations in the Hotel or Restaurants. Good knowledge in wines and mixology.
2. University / Diploma graduate in Hotel Management.
